Pork & Shiitake Mushroom Stir Fry

INGREDIENTS
90g (2 nests) rice noodles
2 pork loin steaks, approx 125g each
1 red onion
1 green (bell) pepper
120g (4oz) shiitake mushrooms
1 tsp oil
1 tsp vegetarian stock powder
half a tsp chilli powder
1 heaped tsp ginger paste
2 tbsp rice vinegar
2 tsp tomato ketchup
1 tsp tomato paste
2 tbsp soy sauce
DIRECTIONS
STEP 1
Place the noodles in a large bowl, cover with boiling water and stand for 3 mins. Rinse in cold water and drain.
STEP 2
Trim the pork steaks and cut into strips.
Peel and quarter the red onion. Deseed the green (bell) pepper and cut into thin slices. Wash the shiitake mushrooms and cut into quarters.
STEP 3
Heat the oil in a large frying pan on a high heat. Once hot, toss in the pork strips and fry for 4 mins before adding the red onion and green (bell) pepper.
Stir-fry for 4 mins. Season with salt and pepper.
Add the mushrooms to the pan and stir-fry for a further 3 mins. Turn the heat to low.
STEP 4
In a small bowl, combine the sauce ingredients - stock powder, chilli powder, ginger paste, rice vinegar, tomato ketchup, tomato paste and soy sauce. Add 2 tbsp water and stir to combine.
STEP 5
Stir the sauce into the pork and veggies and cook gently for 2 minutes. Add the noodles and cook for 1 more minute.
Serve the stir-fry between two large bowls.
