Herby Chicken with Lemony Fusilli

INGREDIENTS
2 tbsp plain flour
small tsp dried mixed herbs
half a tsp chilli powder
250g (2 fillets) diced chicken breast
1 tbsp olive oil
120g (4oz) fusilli pasta
1 medium courgette (zucchini)
1 red (bell) pepper
1 lemon
20g (1oz) parmesan
1 heaped tsp garlic paste
DIRECTIONS
STEP 1
Pre-heat the oven to 220C/200C Fan/425F.
In a large bowl, mix together the flour, mixed herbs, chilli powder and season well.
Add the chicken to the bowl and mix through until the chicken is fully coated.
STEP 2
Heat the olive oil in a frying pan on a med-high heat. Add the chicken and cook for 3-4 minutes each side until nicely browned. Transfer the chicken to a baking tray and cook in the oven for 10-12 mins.
STEP 3
Bring a pan of water to the boil with a pinch of salt. Add in the fusilli and cook for 10-12 minutes until just cooked.
Trim and chop the pepper and courgette.
STEP 4
Bring the frying pan for the chicken back up to a high heat and add the chopped pepper and courgette (zucchini). Cook, turning only occasionally, until the pepper and courgette (zucchini) is charred, 7-8m.
STEP 5
Wash and zest the lemon. Squeeze out the juice into a small bowl, removing any pips.
Finely grate the parmesan. In a small bowl, combine the lemon juice and zest, half the parmesan and season well. Turn the heat under the frying pan to low. Add the garlic paste and fry gently for 30 secs.
Add the fusilli pasta and stir through the vegetables, making sure the pasta is not stuck together. Remove from the heat, then stir through the lemony sauce.
STEP 6
Divide the pasta between two bowls and serve with the chicken arranged over the top. Finish with the remaining parmesan.
