Herby Chicken with Couscous and Pickled Carrot

70g (half cup) Couscous
2 heaped tsp garlic paste
2 tsp vegetarian stock powder
1 carrot
2 tsp rice vinegar
1 tsp sugar
1 medium courgette (zucchini)
1 tsp olive oil
250g (2 fillets) diced chicken breast
2 tsp zaatar spice mix
1 tbsp honey
2 tbsp natural yogurt
handful fresh coriander (cilantro) leaves, chopped (optional)
STEP 1
Boil a half-full kettle.
Put the couscous in a saucepan, add 1 tsp garlic paste (or 1 crushed clove) and the stock powder. Add 200ml (7 fl oz) of the boiled water. Stir the couscous. Cover and leave to rest for 8-10 mins.
STEP 2
Peel the carrot and coarsely grate. Place the carrot in a medium bowl and add rice vinegar and sugar. Stir and set aside.
Wash and trim the courgette. Quarter lengthways then cut into cubes.
STEP 3
Heat the olive oil in a large frying pan on a high heat. Once hot, add the diced chicken and courgette. Fry until the chicken is golden brown and cooked through, 8-10 mins. Season with salt and pepper and the zaatar spice mix. Stir well.
STEP 4
Remove from the heat and stir in the remaining garlic, allowing it to cook through in the still hot pan. Drizzle over the honey and toss through.

Stir the coriander through the couscous.
STEP 6
Spoon the couscous into your bowls. Top with the spiced chicken and the pickled carrot. Drizzle over the yogurt.
