Garlicky Potatoes with Fried Eggs

INGREDIENTS
600g (21oz) salad potatoes
1 tbsp olive oil
30g (1 heaped tbsp) butter
4 spring (green) onions
1 heaped tsp garlic paste
4 large eggs, room temperature
1 tsp dried mixed herbs
DIRECTIONS
STEP 1
Wash the salad potatoes - no need to peel. Halve or quarter the potatoes, depending on size.
Bring a large pan of water to the boil with a little salt. Add the potatoes to the pan and cook until just tender, 12-15 mins.
STEP 2
Trim the spring (green) onion and chop into small rings.
STEP 3
Heat the olive oil and butter in a large frying pan over a medium heat. When hot, add the cooked potatoes and spring (green) onions and toss to coat. Season with salt and pepper. Fry for 3-5 minutes, until gently golden.
STEP 4
Add the butter, garlic paste and dried mixed herbs. When the butter has melted, toss to combine and cook for 2 minutes more.
Remove the potatoes from the pan and set aside to keep warm.
STEP 4
Put the pan back on a medium-high heat. When back at temperature, crack in the 4 eggs. Note: you might need to do this in two batches. Cook the fried eggs how you like them. eg. Cook for 1 minute, then flip for another 30 seconds.
STEP 5
Divide the garlicky potatoes between two bowls, and top with two eggs per person.
